1.
In a pan add the sugar and water. Put it on a medium heat and make a sugar syrup with one string consistency. Keep stirring in between.In a separate heavy bottomed pan pop the Rajgira seeds without any oil. It will become almost 2 cups.

When the sugar syrup achieve the desired consistency add khoya and mix well so that there are no lumps.

When the khoya and sugar syrup combines well add ghee. Mix till it becomes a homogeneous mixture.

Now start adding Rajgira. Add it gradually in 4-5 batches. Mix well after adding one batch.

Keep mixing till everything combines well and becomes grainy and sandy in texture.
6.
Switch off the stove but do not leave the rajgira. Add the chopped dry fruits and cardamon powder.
7.
Keep mixing for another five to seven minutes and then take it out on a plate to cool down.
8.
Bring it to room temperature but do not refrigerate.
9.
Store it in an airtight container. It will stay fresh for ten days.
