Holi is one of India's most ancient and popular festivals, and it is widely celebrated.
This colorful dish is sure to make your day a little brighter and your Holi a little more joyous.

Add dal with with 1 green chili and 1 inch ginger in a mixer jar, and grind to make a paste. Beat dal well to make it light and fluffy. Add salt as needed and mix well .Heat the oil. Shape the vadas and fry in hot oil, to a golden brown over medium heat. *Soak them in water & flatten between your palms to remove excess water

For Green color, whisk 2 tbsp of curd with as needed salt and sugar till smooth, add green chutney and mix well. For Pink color, whisk 2 tbsp of curd with salt and sugar till smooth add beet juice and mix well

For orange color, whisk 2tbsp of curd with salt and sugar till smooth, add Imli chutney and mix well. For White colour. Whisk 2 Tbsp of curd with salt and sugar till smooth

For Serving :Pour different types of curd over the ready vadas. Sprinkle the red chilli powder.cumin powder. Garnish dahi vada with chopped coriander leaves, sev, cashews. Serve dahi vada immediately.
