Lemon Peel Tea can be prepared using both fresh or dried lemon peels. Look for a thicker-skinned lemon peel, better for zest.

Description
Lemon peel tea is prepared by boiling water over the thinly peeled lemon rind and sugar, placed in a pitcher. It is left to cool and the liquid is strained. Some lemon juice can be stirred through it and it can be served, garnished with a mint leaf. Lemon peel tea is consumed for its health benefits. Some research studies have even found that consumption of lemon peels in tea prevented the growth of cancer cells.
