Description
Fried shallot flakes are thinly sliced shallot, fried in moderately-hot (about 325 degrees) vegetable oil until they are crisp and golden-brown, for 5 to 10 minutes. They are drained on paper towels and stored. They are widely used as an ingredient and garnish in Chinese cooking.
